“An important thing to remember is it's a byproduct from another industry that's just come into horticulture in the last 15 years or so. And in order for someone to shuck that coconut, process that husk, and get you a compressed block for a couple dollars while they're producing these coconuts in India or Sri Lanka, there's an associated tolerance we accept. If we wanted every block to be absolutely uniform, you'd be paying a lot more for your coco.”
